Lemon Caper Fish

Ingredients
- 1/4 cup butter
- 1 white or yellow onion
- 1 lemon
- 1/4 cup capers
- 1 pound (or two filets) white fish (cod, tilapia, grouper)
- salt and pepper
- white rice, lemon wedge, and parsley for serving
Instructions
- If serving with rice, make your rice
- Heat the butter in a pan over medium heat
- While butter is melting in the pan, cut up the onion into slices and place into pan to cook. Let simmer on medium heat for about 5 minutes, stirring occasisonally. Season with salt and pepper
- Add the capers to the pan
- Salt & pepper your fish and then nestle the two filets into the pan
- Let the fish cook about 5 minutes per side, depending on how thick the filets are
- Add more salt and pepper to taste
- Serve fish over rice and top with lots of sauce!
